The importance of the regeneration process for a vacuum kitchen

Regeneration is a fundamental and simple process for the "sous-vide" kitchen. It consists of heat the product to preserve all its organoleptic qualities and to be sure that it isn't cold on its inner.
 
Using the proper technique, not only do we enhance the quality and flavor of food but also, we are able to reduce its waste.
 
For our range of "sous-vide" products, we recommend to use techniques such as steam oven, roner or "bain-marie".

SELF-CONSUMPTION PHOTOVOLTAIC INSTALLATION ON ROOF OF 288.47 KWP

At Gicarns we have made a self-consumption installation on the roof, which consists of a photovoltaic field made up of 634 modules of 455 Wp each, thus creating a photovoltaic installation of 288.47 kWp of peak power. 3 inverters have been installed with a total nominal power of 250kW, distributed in two 100 kW inverters and one 50 kW inverter.
 
This project has been included in the incentive program related to self-consumption and storage, with renewable energy funds, as well as the implementation of renewable thermal systems in the residential sector, within the framework of the "Pla de Recuperació, Transformació i Resiliència", funded by the European Union – NextGenerationEU; specifically to the incentive program 2 that corresponds to the realization of self-consumption facilities with renewable energy funds in productive sectors of the economy, with or without storage.

Las Infantas restaurant at the H10 Villa de la Reina Hotel located in the heard of Madrid did an even related on traditional cuisine with the collaboration of "La Cuina de Sils" association, with the aim of showing the gastronomic wisdom from generation to generation.
 
The proposed gastronomic menu offers meatballs with cuttlefish dish, made with our meats. This traditional dish is one of the most characteristic of the grannies who make up "La Cuina de Sils".

This year we celebrate the 10th anniversary. Since our beginning it has been a constant fight to convince that good meat, work well done and honesty can have a place in this competitive market such as frozen meat.
 
In the early, the culture of frozen meat was synonymous with cheap, second-rate, even surplus or poor condition. Our work base is quality fresh meat, good handling and deep-freezing to guarantee maximum freshness and shelf life of our product. There are no differences between fresh and frozen. The deep-freezing process guarantees that we preserve the organoleptic characteristics intact. Today we can affirm that GICARNS customers can enjoy a pampered product, handled with criteria, always prioritizing quality, food safety and product homogeneity.
 
In my opinion, there is a long way to go and implement new improvements in the frozen meat concept. There is no turning back, and it is a notable improvement for today and the future. In this sense, we have to provide improvements day by day, organize and readopt to the current situation and guarantee more food security for the final consumer.

Our challange to make gluten-free products

At GICARNS we assume a new quality commitment to our consumers, transforming the entire range of articles into products suitable for celiac.

Completely, eliminating the presence of gluten in the facilities has been an essential requirement to guarantee the absence of traces and cross contamination. This has meant a significant effort of innovation in the manufacturing plant, with a priority objective being to maintain the organoleptic quality, texture, and presentation of the products that we were offering until now. However, it was an essential condition for the GLUTEN-FREE commitment that our articles could be suitable for all our clients and their consumers. Aware that the current economic situation is not easy, GICARNS has opted not to impact on the rates of the increased cost involved in adapting to this project.

Currently, we can offer an assortment of more than 120 GLUTEN-FREE references, among which 33 are preparations of meat, and include our pie for celiac.

And we continue working to be able to reach the most sensitive group with the greatest quality guarantees.

GICARNS begins to produce its gluten-free products

In its continuous challenge to improve the quality of the products we produce, and always with the desire to respond to the demand and needs of our customers, at GICARNS we have started the production of GLUTEN-FREE products, suitable for people with celiac disease.
 
In recent years, the diagnosis of this disease has increased significantly, affecting a significant group of children and adults, who must completely exclude the presence of gluten from their diet. In order to meet this need with guarantees, kitchens must adapt their facilities, equipment, and processes and prepare these menus individually from the rest of the dishes. This implies significant additional costs, to which we must add the price differential for gluten-free foods.
 
At GICARNS we have adapted our formulations, raw materials and internal procedures, to be able to produce products suitable for celiac, and thus make work in your kitchens easier and more profitable, The process has been carried out with strict rigor, establishing the necessary analytical and operational controls to be able to provide the essential food and nutritional guarantees.
 
The products have been tested and are presented with the same flavor, texture, and quality as always, so that their organoleptic quality has not been affected.
 
GICARNS has starts its gluten-free productions, which will soon be marketed. The products and batches produced under these controls have been duly identified and will be able to differentiate they, because their labeling includes the mention GLUTEN-FREE PRODUCT.

In accordance with the needs of the HORECA sector, GICARNS has started working on the production of minced beef, pork and mixed meat.
 
With a double chopping and freezing system, we get our minced meat to be looser once thawed, tender and with a very pleasant texture.
 
It comes in a 4kg box (1 blocks of 1kg). As always, our goal is to continue facilitating, streamlining and improving the work of kitchen professionals while contributing to the optimization of resources and cost reduction in waste and labor.

New sorting machine

Now, more than ever, we are committed to product consistency.
 
We continue to invest in machinery, this time with a new sorter with a capacity of 120 weighing per minute and with a margin of ± 5g.
 
Due to the demands of our customers, we improve the calibration for the most accurate "real cost" possible.
